{Beyond easy} BBQ Chicken Salad Pizza



Yesterday was a long and emotional day 
(I saw a man riding his bike get hit by a car and he flew 14 feet in the air and it was very, very traumatic to say the least. It was the car in front of me that hit him. I could not stop crying all afternoon).

 I needed to cook a fast (but yummy because I needed comfort food) dinner. 

Thankfully I had been to Trader Joes earlier in the day.
So I decided on BBQ chicken Salad Pizza.
I first rolled out the dough
put some BBQ sauce on it
I usually use mozzarella, but I only had the Mexican mix of yellow and white cheese, so I just used that.
Then I cooked it at 425 for 15 minutes
Next I mixed up the BBQ chicken Salad from TJ 
Once the pizza was done I topped it off with the BBQ salad

It was gone before I could take a photo of it.

My husband (who is usually more of a meat and potatoes kind of guy) could not get enough of it! He kept saying "this is soooo good!" 
and it was.
I always love easy, fast and yummy recipes, so I thought I would share it with you. 
Next time I'll try and take a photo of the end result!

  2. oh i cannot even begin to imagine witnessing such an awful thing! just the other day i was telling my love how awful it would be to witness an accident and not be able to do anything to control or stop it. i'm sorry you had to see that. as far as the pizza, i'm going to have to try this!! i need easy and delicious :)
